Gringo Jack's Chilie rubbed flaky tortilla chips: Intriguing texture. The closest thing I can compare it to is the fried corn snacks sometimes served at takeout Chinese restaurants (with a side of duck sauce), but a thinner, flakier version. Not a healthy snack: although the texture is lighter than normal chips, these are certainly deep fried, even if it's using high quality oils. The chilie flavor is lightly smoked with a balanced level of seasoning. Maybe more interesting than good overall. 3.5/5.0

Hardbite Eat Your Parsnips Lightly-Salted Parsnip Chips: These are literally strips of parsnip that have been cooked in avocado oil and lightly seasoned. Thin and crispy, golden brown (some a little on the darker side, giving it a slightly bitter, burnt flavor), they taste like portable root vegetables and have the distinct sweetness you'd expect from parsnip. Heaven & Earth Taro Chips: Kind of like Terra blue chips, these taro chips eat like they're one-level up from normal potato chips but really are just appealing to those who love potato chips but feel too guilty to eat Lay's. They consist of jus a few ingredients: taro, palm oil, and salt, and taste mostly of oil and salt; the chips are sliced impressively thin and have a crispy texture. Herr's baked aged cheddar chips: I purchased these from a vending machine in lab since it was the only healthier choice option I saw. This is the first time I had chips that tasted like Kraft Mac and cheese cheese powder. Definitely on the salty side. Very few chips (I believe around 13) per bag. Serving size is probably the main reason this is one of the lower calorie vending machine options. 1.5/5.0

Hokkaido Sapporo Roast Corn Taste Potato Chips: These potato chips have a sweet and savory roasted corn flavor, almost like a corn chowder. I did like the overall flavor, but the chips were a bit lackluster, saturated oil and thin to the point of flimsy - if you held it up to the light, you could see through them. Overall, I would not purchase them again though the flavor was unique. 3.0/5.0

Hula's Sour Cream Maui Chips: These potato chips are marketed as being made using "American Potato Chip Methods" but are fully Japanese, first developed by a Japanese man who spent time in Hawaii during WWII. By "American Method," I think it's referring to a kettle style potato chip that's thicker and crunchier than most potato chips you can find in Japan, which tend to be almost translucent in thinness.
